Neopullulanase (EC 3.2.1.135, pullulanase II) is an enzyme with systematic name pullulan 4-D-glucanohydrolase (panose-forming).[1] This enzyme catalyses the following chemical reaction
- Hydrolysis of pullulan to panose (6-alpha-D-glucosylmaltose)
